I don't know about the 'deaflympics', however, XC or cross-country skiing uses a different type of skis than downhill or alpine skiing. They're longer and the back of it comes out. In general skiing, and XC skiing should be no problem at all for deaf people. It would come to the same effect as someone with really loud music who cannot hear things around them. It wouldn't be too much trouble.
